This was actually pretty tasty, it just needed some Parmesan to hold it all together :). The cauliflower rice is not a perfect substitute but it holds flavor pretty well and gets the job done. It also reheated well for lunch the next day at work.

recipe here and added some celery and parsley, as well as more garlic than it called for.
