Homemade Garlic Mayo


I read on one of the forums that sweet potato fried and homemade mayo were a good treat, and man they weren't kidding! It takes a little work but it satisfied my craving for junk. Sweet potatoes just got chopped up, tossed with olive oil, salt, and pepper, and roasted at 400 degrees for about 30-40 minutes (until tender). The mayo was easier than expected and more of an ailoli but still delicious! I added some roasted garlic, just because.
