Baked Sweet Potato with Broccoli


Another simple, easy meal. Scrub and pierce a small sweet potato and microwave for five minutes. Then wrap in tin foil and rub with olive oil and salt. Bake at 400 degrees for about 20-30 minutes, until soft with crisp skin. Slice open, top with butter or ghee and garlic salt. I topped mine off with some steamed broccoli and it was delish!
