Egg Salad


So with all the leftover mayo, I whipped up an egg salad. Using chopped pre-hard boiled eggs, I threw in about a teaspoon of mustard, a stalk of finely chopped celery, half a finely chopped shallot, salt, pepper, and paprika. Then I added in mayo until it all had a nice creamy texture. Great lunch or snack!
