Cauliflower Cream Sauce
Oh cauliflower, is there anything you can't do?? Rice, pizza crust, you name it and cauliflower's got it covered. This recipe was really good and would make a great soup (with some truffle oil!).
Ingredients
1 head cauliflower, chopped into florets
2 Tablespoons olive oil
1 shallot, diced
1 cup broth
1 can coconut milk (15 oz.-ish)
Salt, pepper, nutmeg
Basil, parsley, and whatever fresh herbs you want to add
Garlic
Chop and steam one head of cauliflower in the microwave with a little water for about 10 minutes or until the florets are really tender. Then you put them in a blender with the remaining ingredients. I added everything to the blender in thirds instead of all at once. Then I put it in a pan and heated it through, adding additional salt to taste. Yum!
