I really love this
shrimp/tomato/garlic/zucchini combo and tried it over mashed cauliflower 'grits' this time. The grits are cauliflower steamed in broth and pureed with an immersion blender. I seasoned them with ghee, salt, and pepper and topped with sauteed shrimp, tomatoes, zucchini, sundried tomatoes, and roasted garlic. Yum!
